Assallamu Alaikum Warohmatullahi Wabarakatuhu –
Wishing you a happy and relaxed Saturday. For some of you tomorrow will be the beginning of the week and for some of us it is the beginning of a very short weekend.
Here is my family favorite meatball recipe found in my multicultural household.
Meatballs & Sauce in Tagine.
Ingredients:
- 1 lb ground beef – in my case i used ground turkey – less fat.
- 1/2 cup crushed (minced) onions
- 1 can crushed tomatoes
- 2 bunches of cilantro – minced
- 1 tablespoon of tomato paste
The key here is to put the same ingredients in the sauce and in the meat mixture.
Spices mixture*:
- salt, pepper, ginger, cumin, paprika, tumeric, – all 1/2 tspn
- sugar – 1/2 tspn only for tomato sauce
- olive oil
How to put it all together:
Meat mixture:
- add onions, cilantro, a little bit of olive oil + spices* to meat / turkey
- blend by hand lightly
- roll into small bite size balls
Sauce:
In Tagine or low saute pan add:
- Olive oil
- Crushed Tomatoes
- tomato paste
- minced onions
- minced cilantro
- spice mixture + sugar
- 1/2 – 1 cup water.
Cook covered until less watery and sauce has become thick. Serve hot with baguette!
